Compared to the mass produced commercial coffee, specialty coffee does seem expensive, but the truth is that cheap coffee isn't even real coffee. THAT coffee is mass produced, low quality (low grown Robusta beans which means it's easier to grow), and purchased from farmers who are not paid enough for their crops. Those mass producing companies would rather make a profit and give you low quality coffee because it's more efficient and cheaper to make.

Drinking specialty coffee allows you to taste the coffee's origin, the nuances of the soil, the break-down of the sugars caramelized in your cup, and the brightness of the fruit. 

Specialty coffee is made of Arabica beans. Arabica beans are grown at higher elevations, hand-picked, hand sorted for specialty grading, sun-dried, and purchased from farmers who are paid at a higher wage. Then, it is hand roasted in small batches to bring out the best. Lastly, it is taste tested before it ships out to you.
